Lemon Cake

Today is the day we are going to make an easy and delicious lemon cake. This is a healthy alternative to the unhealthy cakes from the store which have poor quality ingredients and preservatives. This cake can be used for a birthday or even a small casual gathering! Grab your lemons and let’s get this party started!

Dry ingredients

1 cup spelt flour 

1 cup almond flour 

3 tsp baking powder

½ tsp baking soda

½ cup sugar/ 1 cup if you want to be as sweet as traditional cakes. 

Zest of one lemon or lime

Wet ingredients

1 spoon lemon/lime juice 

3 eggs 

1 cup coconut cream

2 tbsp salted butter (Salted so you don't have to add salt separately)

2 tbsp coconut oil

2 tbsp vanilla extract

Instructions 

1. Preheat the oven to 375 F. 

2. Combine the 5 dry ingredients together in a small bowl and mix them together. Make sure you get out any lumps in the mixture.

3. Before we do the wet ingredients, put your salted butter and coconut oil to melt on the stove. And let it cool before pouring it in. 

4. In a bigger bowl add all the wet ingredients and mix until the egg is well distributed. 

5. Pour your dry ingredients into the wet ingredient bowl and mix until well combined. 

6. Oil your cake pan, I personally use a thin 12x12 pan. If you want to pop your cake out of the pan then oil the sides and bottom with more oil then normal. 

7. Pour mixture into your cake pan and cook for 15-20 min.

8. Serve right away or let it cool and wire rack 

Optional

9. You could also add toppings like whipped cream, berries, other fruits etc.
