Crust ingredient:
1 ½ cups spelt flour
1 tbsp sugar
½ tsp baking powder
Dash of salt
12 tbsp cold butter (cubed)
¼ cup cold water
Crust instructions:
Blend dry (crust) ingredients together in a food processor. Then add the cubed butter. Blend for a few seconds and then pour the cold water in while pulsing.
Peach filling ingredients:
5 big peaches
The syrup:
½ tsp vanilla extract
1 ½ tbsp lemon juice
2 tbsp cassava flour
1 cup sugar
⅛ tsp cinnamon powder
1 cup water
Filling Instructions:
Simmer all the ingredients. Whisk together and bring it to a boil and let it thicken for 2-3 minutes. Now wash and slice the peaches. Next add your peaches to the simple syrup and let that simmer for 5-7 minutes depending on the ripeness of your peaches.
