CHOCOLATE CHIP COOKIES
This recipe was developed when I was trying to recreate a gluten free version of my favorite cookie: chocolate chip cookies. While many people think gluten free items are just a trend, the truth is avoiding grains, especially gluten containing grains like wheat, can mean better digestion, a healthier gut, and fewer autoimmune symptoms. Simply put, for many people, avoiding gluten can lead to a happier tummy and fewer allergies. I hope you try this recipe!
Dry ingredients:
1 ¾ cup almond flour
½ cup sugar
½ tsp baking soda
¾ cup chocolate chips
Wet ingredients:
⅓ cup salted butter
1 egg
1 tbsp vanilla extract
Instructions
1. Preheat the oven to 350 F.
2. Melt butter and let it cool.
3. Mix together your sugar, egg, vanilla extract, and butter once cooled.
4. Next add your almond flour and baking soda into the egg mixture.
5. Once well combined, fold in the chocolate chips.
6. Line a large baking pan with parchment paper.
7. Scoop your cookie dough into the pan, I use an ice cream scooper.
8. Bake cookies for 10-15 minutes or until desired doneness.
9. You can let the cookies cool or enjoy them warm.
