Fresh & Creamy Sushi Roll

Ingredients:
1 Nori seaweed sheet

Half an avocado

A cucumber

Half a cup of cooked sushi rice

2 tbsp cream cheese

Instructions:
Wash your rice and cook according to the package instructions

While your rice cooks, wash and slice your cucumber thinly and set aside. Cut your avocado open, remove the pit, and slice thinly, then scoop out with a spoon.

Once the rice is done, put it in the fridge to cool.

Once your rice is cooled, take your nori sheet and place onto a flat surface, preferably a bamboo sushi mat. Spread your rice onto half of the sheet. Over the rice, place small chunks of the cream cheese. And now place your avocado and cucumber strips horizontally.

Start to roll from the filled side of the nori, using the bamboo mat to guide and tightly compress the roll as you move forward. After you roll until the edge of the nori sheet, dip your finger in water and lightly slide your finger over the edge to help it stick when you finish rolling.

Once fully rolled, cut into bite sized pieces with a very sharp knife. A tip is to have a bowl of water next to you to wet your knife between cuts, this helps the knife slide through the sushi with less mess. Cut into about 6 to 8 pieces depending on your preferred thickness.
