Zoodles (Zucchini Noodles)

This is a dish of full of flavor and packed with nutrients.

I spiralized two zucchinis. Since they're mostly water, they shrink a bunch when cooked. Once I've got enough zoodles to fill me up, I add salt and oil and pop them in the oven until they're a bit golden on the edges. They cook super quick, so make sure to keep an eye on them! Then add all your favorite toppings. Mine are tomatoes sauce, fresh mozzarella, and fresh basil.

To this particular bento box I added Kalamata olives, roasted walnuts, date and nut truffles, and a raspberry macaron as a treat!

I love using these glass bento boxes! They are so simple and very roomy. Additionally I can avoid using plastics too! I also have silicone cups to keep food separate and more organized.
